Kabocha Soup Recipe
Ingredients
- 1 medium kabocha squash about 2 pounds
- 2 tablespoons olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 tablespoon grated ginger
- 1 teaspoon curry powder
- 4 cups vegetable broth
- 1 13.5-ounce can coconut milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Cut the kabocha squash in half and remove the seeds. Place the squash halves cut-side down on a baking sheet.
- Roast the squash for 45-60 minutes, or until tender.
- While the squash is roasting, heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic, ginger, and curry powder and cook for 1 minute more, until fragrant.
- Pour in the vegetable broth and bring to a boil.
