Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
In a separate bowl, cream together the granulated sugar and brown sugar until light and fluffy. Beat in the vegetable oil, eggs one at a time, and then stir in the vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing just until combined. Stir in the chopped mangoes.
Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
