Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts optional
  • 1/4 cup dried fruit optional

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
  • In a large bowl, whisk together the flours, baking powder, and salt.
  • In a separate bowl, whisk together the honey, olive oil, water, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Stir in the nuts and dried fruit, if using.
  • Spread the batter into the prepared baking pan.
  • Bake for 25-30 minutes, or until golden brown.
  • Let cool completely before slicing and serving.

Notes

For a sweeter lembas bread, add more honey to the batter.
For a more savory lembas bread, add more salt to the batter.
You can also experiment with different types of nuts and dried fruit.
Lembas bread can be stored in an airtight container at room temperature for up to 5 days.
Variations
Elven Lembas Bread: To make this version of lembas bread, use all whole wheat flour and add 1/2 teaspoon of ground cinnamon to the batter.
Human Lembas Bread: To make this version of lembas bread, use all white flour and add 1/4 cup of sugar to the batter.
Dwarf Lembas Bread: To make this version of lembas bread, use half all-purpose flour and half whole wheat flour, and add 1/4 cup of chopped dried apples to the batter.
