In a large bowl, whisk together the flours, baking powder, and salt.
In a separate bowl, whisk together the honey, olive oil, water, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Stir in the nuts and dried fruit, if using.
Spread the batter into the prepared baking pan.
Bake for 25-30 minutes, or until golden brown.
Let cool completely before slicing and serving.
