1/4cup1 stick unsalted butter, cold and cut into small pieces
Instructions
Preheat oven to 375 degrees F (190 degrees C).

Make the topping: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter with a pastry blender or two knives until the mixture resembles coarse crumbs. Stir in the milk until the dough just comes together.
Drop the dough by spoonfuls onto the filling.
Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
Let stand for 10 minutes before serving.

Tips
For a richer flavor, use rotisserie chicken instead of cooked chicken.
You can also add other vegetables to the filling, such as corn, green beans, or potatoes.
If you don't have cream of chicken soup, you can substitute with 1 (10.5-ounce) can condensed cream of mushroom soup and 1/2 cup of milk.
For a more flavorful topping, brush the top with melted butter before baking.
Chicken cobbler can be reheated in the oven at 350 degrees F (175 degrees C) for 15-20 minutes.
VariationsThere are many different variations of chicken cobbler. Here are a few ideas:
Cheesy Chicken Cobbler: Add 1-2 cups of shredded cheese to the filling before baking.
Spicy Chicken Cobbler: Add 1-2 tablespoons of your favorite hot sauce to the filling.
Herb Chicken Cobbler: Add 1 tablespoon of chopped fresh herbs, such as parsley, thyme, or rosemary, to the filling.
Vegetarian Chicken Cobbler: Use vegetarian chicken instead of cooked chicken.
Vegan Chicken Cobbler: Use a vegan cream of chicken soup and vegan butter.
