Ingredients
  

For the filling

  • 1 4-ounce stick unsalted butter, melted
  • 4 cups cooked chicken shredded
  • 1 15-ounce bag frozen mixed vegetables
  • 1 10.5-ounce can cream of chicken soup
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the topping

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cold milk
  • 1/4 cup 1 stick unsalted butter, cold and cut into small pieces

Instructions
 

  • Preheat oven to 375 degrees F (190 degrees C).
  • Make the filling: In a large bowl, combine the melted butter, shredded chicken, frozen vegetables, cream of chicken soup, chicken broth, thyme, salt, and pepper. Pour the filling into a 9x13-inch baking dish.
  • Make the topping: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter with a pastry blender or two knives until the mixture resembles coarse crumbs. Stir in the milk until the dough just comes together.
  • Drop the dough by spoonfuls onto the filling.
  • Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  • Let stand for 10 minutes before serving.

Notes

Tips
  • For a richer flavor, use rotisserie chicken instead of cooked chicken.
  • You can also add other vegetables to the filling, such as corn, green beans, or potatoes.
  • If you don't have cream of chicken soup, you can substitute with 1 (10.5-ounce) can condensed cream of mushroom soup and 1/2 cup of milk.
  • For a more flavorful topping, brush the top with melted butter before baking.
  • Chicken cobbler can be reheated in the oven at 350 degrees F (175 degrees C) for 15-20 minutes.
