Ingredients
  

For the Meatballs:

  • 1 large egg
  • 1/4 cup minced onion
  • 1/4 cup minced green bell pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Rice:

  • 2 cups long-grain rice
  • 4 cups chicken broth or water
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt

Instructions
 

For the Meatballs:

  • In a large bowl, combine all the meatball ingredients and mix well until evenly combined.
  • Form the mixture into 1-inch meatballs.
  • Heat a large skillet over medium heat and brown the meatballs on all sides.
  • Remove the meatballs from the skillet and set aside.

For the Rice:

  • In a medium saucepan, heat the olive oil over medium heat.
  • Add the rice and stir to coat with oil.
  • Pour in the chicken broth or water and add salt.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and all the liquid has been absorbed.

Assembly:

  • Transfer the rice to a serving dish.
  • Arrange the meatballs over the rice.
  • Serve warm and enjoy!
