Meat Church Texas Chili
Ingredients
- 2 pounds of ground beef
- 1 pound of hot breakfast sausage
- 1 pound of chuck roast Alternatively Matt loves using brisket, venison medallions or quarters.
- 3 medium red onions diced
- 1 head of garlic minced (sub 3 T Spice World Ready to Use garlic)
- 1 can 28 ounces crushed tomatoes
- 1 can 28 ounces diced tomatoes
- 1 can 15 ounces kidney beans, drained and rinsed
- 1 can 15 ounces pinto beans, drained and rinsed
- 1 can 10 ounces diced tomatoes and green chiles
- 1 can 2 ounces chipotle peppers in adobo sauce, minced
- 1 12-ounce beer
- 6 tablespoons Meat Church Texas Chili Seasoning
- Salt and pepper to taste
Instructions
- Brown the ground beef and breakfast sausage in a large skillet over medium heat. Drain off any excess grease.
- Add the chuck roast to the skillet and cook until browned on all sides.
- Add the onions, garlic, and chipotle peppers to the skillet and cook until softened, about 5 minutes.
- Stir in the crushed tomatoes, diced tomatoes, kidney beans, pinto beans, diced tomatoes and green chiles, beer, and Meat Church Texas Chili Seasoning.
- Bring to a boil, then reduce heat and simmer for 2 hours, or until the chili has thickened.
- Season with salt and pepper to taste.
