Benihana Fried Rice Recipe
Ingredients
- 3 cups cooked white rice
- 2 tablespoons vegetable oil
- 2 eggs beaten
- 1/2 onion diced
- 1 carrot diced
- 2 cloves garlic minced
- 1/4 cup frozen peas
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the rice: If you don't have already cooked rice, cook it according to package directions. For best results, use day-old rice or rice that has been refrigerated overnight.
- Prepare the vegetables: Dice the onion and carrot. Mince the garlic.
- Cook the eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until cooked through. Remove the eggs from the pan and set aside.
- Cook the vegetables: Add the remaining 1 tablespoon of vegetable oil to the pan. Add the onion and carrot and cook for 3-5 minutes, or until softened. Add the garlic and cook for 30 seconds more, or until fragrant.
- Add the rice and peas: Add the cooked rice and frozen peas to the pan. Stir-fry for 3-5 minutes, or until the rice is heated through and the peas are thawed.
- Season the rice: Stir in the soy sauce, sesame oil, salt, and pepper. Cook for an additional 1-2 minutes, or until the flavors have melded.
- Serve: Return the scrambled eggs to the pan and stir them in with the rice. Serve immediately, garnished with additional green onions or sesame seeds, if desired.
